Sweet Potato Bruschetta

Ingredients
• 2 Sweet potatoes

•12 baby tomatoes

• Handful of basil

•1/4 of a red onion

•1/2 of an avocado

• Olive oil

Directions
• Thinly slice a sweet potato into circles (I used a Japanese sweet potato)
• Place the cut sweet potato in the oven to roast at 400 F for 20-25min
• While the sweet potato is cooking, chop 12 baby tomatoes and a handful of basil. Next, dice 1/4 of a red onion and 1/2 of an avocado.
• Mix the ingredients listed above in a bowl with 1tbsp of olive oil, salt & pepper
• Finally, top the roasted sweet potato with your bruschetta

*Optional* use any preferred potato of choice for the base. Optional topping includes everything but the bagel seasoning and red pepper flakes.
