Banana Bread Pancakes

Ingredients
•1 ripe banana
•1/2 cup non-dairy milk
•1 tbsp maple syrup *optional
•1 tbsp apple cider vinegar
•1 tsp baking soda
•1 1/2 cup gf flour, I used oat flour (just blend oats)
•2 tbsp mini chocolate chips (I used @hukitchen snacking dark chocolate gems)

Instructions
1. Blend the banana, milk, vinegar, and maple syrup.
2. Add the dry ingredients. Blend on low until combined, stopping to stir as necessary. Don’t over-blend.
3. Heat a non-stick pan over medium heat (I recommend spraying it lightly just to make sure they don’t stick).
4. Drop about 1/4 cup of batter into the pan and spread into a circle.
5. Cook for 2-3 minutes over medium heat or until you can easily slide a spatula underneath. Flip and cook for 2-3 minutes on the second side. Remove from the pan.
6. Repeat until all the batter is used up.
7. Add toppings of choice and enjoy!

Notes
1:1 gf flour blend from Trader Joe’s works great, as well as quinoa flour:)
