15 MIN CREAMY ARTICHOKE PASTA

Ingredients
•Pasta (I used gf pasta)
•Wild shrimp
•Sun-dried tomatoes
•Artichokes
•Spinach
•Olive oil
•Salt & pepper
•Trader Joe’s Ajika spice

Optional toppings
•Tahini
•Capers

Directions: 


1.Cook pasta according to instructions on package and drain, reserving ¼ cup pasta water.

2. Sauté shrimp in a pan with avocado oil, Ajika spice, salt and pepper (3 minutes each side)
Once shrimp are cooked, add 1 shallot sauté for 1-2 minutes. Next add sun-dried tomatoes, spinach and the poshi artichokes hearts - continue to sauté for a couple more minutes.

3.Add cooked pasta and reserved pasta water and toss to combine. Add olive oil, Ajika spice, salt, and pepper.

4.Optional drizzle tahini and top with capers

NOTE* If you don’t have the trader joes Ajika spice used garlic powder, onion powder and red pepper flakes.
