PROTEIN & FIBER PACKED COOKIE DOUGH
Cookie dough for breakfast, anyone?
You’d never guess that this cookie dough is packed with so many plant-based, whole food ingredients that not only support our hormones & balanced blood sugar but our overall health. Full of soluble fiber, plant protein, & healthy fats— this is my luteal phase dessert of choice.
You’ll need (~2 servings, 25+g protein each)
* 1 can of cooked chickpeas
* ¼ cup tahini
* 1 tsp vanilla extract
* 3 tbsp coconut flour
* 1 1/2 scoops of vanilla protein powder: Four Sigmatic and Truvani are great
* 2 tbsp maple syrup (plus more to taste)
* as many chocolate chips as your heart desires
* ½ tsp sea salt
* 1/4 cup of your favorite milk (for texture)
Add everything to a food processor, fold in your chocolate chips, & enjoy heaven! Click here for the video.
